Helping Nestlé maintain its competitive edge and high quality standard "Crumb" chocolate, prepared by Nestlé's European facilities, had always been the main ingredient in the chocolate bars produced at its Toronto factory. With growth in its North American business, Nestlé expected that substituting fine ingredients chocolate would provide several advantages. To confirm this, Nestlé conducted an extensive market acceptance program. Concurrently, Dick Engineering and Nestlé worked together to determine how to implement the substitution within very tight budget and schedule constraints. The latter activity required the consideration of numerous alternative designs for the process. The new proprietary system has two main components:
