The Brick brewery is the first brewery of its size to be built in Ontario in over 30 years. The pasteurized, premium, lager beer produced by the brewery without preservatives, was unique to Ontario.

The following highlights some of the features of the project:

• three-vessel brewhouse
• uni-tank configuration for fermenting and aging
• filtration system consisting of DA, followed by sterile filtration using cellulose fiber media which eliminates the need for pasteurization, which can reduce flavour and freshness
• on site beer store
• unique design to adapt vintage brick and timber buildings to provide facilities that are efficient to operate, economical to build and maintain, and attractive to customers

Dick Engineering's role in the project included:

• pre-investment feasibility study that established the most economical plant size, capital and operating costs and profit margins
• complete engineering design, procurement and project management
• commissioning and startup
